Honey Roasted Apricots

Recipe by Preferred Sonoma Caterers

1 pound Apricots (pitted and quartered)
1/4 cup Olive Oil
1 pinch Salt and Pepper
1/2 cup Honey

Place apricots in a baking pan with sides. Drizzle with olive oil and roll until well coated. Sprinkle with salt and pepper.

Bake 8 to 10 minutes.

Remove from oven, add honey. Serve over Fromage Blanc with toasted crostinis.
